Key Responsibilities & Duties
- Full P&L & Commercial Leadership: Take full responsibility for the restaurant's financial performance, including GP, stock control, labour costs, and revenue targets. Analyse weekly reports and implement strategic actions to maximise profitability.
- Team Leadership & Development: Recruit, train, motivate, and manage a large team of waiting staff, bartenders, and supervisors. Foster a positive, high-performance culture through effective communication, fair rostering, and structured performance reviews.
- Guest Experience & Standards: Maintain and elevate the highest standards of service, presentation, and cleanliness. Proactively handle guest feedback, resolve complaints diplomatically, and build a loyal customer base.
- Operational Excellence: Oversee all daily operations, including health & safety compliance (HACCP, allergen management), licensing laws, opening/closing procedures, and maintenance schedules. Ensure seamless collaboration between the front of house and the kitchen, liaising closely with the Head Chef.
- Marketing & Business Growth: Work with senior management to develop and execute local marketing initiatives, event planning, and promotions to drive footfall and increase average spend.
Essential Skills & Experience Required
- Proven Restaurant Management Experience: A minimum of 3 years in a management role within a fast-paced, high-quality restaurant or gastro-pub environment.
- Financial Acumen: Demonstrable experience managing budgets, controlling costs, and driving sales. Proficiency in using EPOS systems and reporting software is essential.
