Lead, Innovate, and Manage
We aren't just looking for someone who can follow a recipe. We need a leader. As the Head Cook, you will be responsible for the entire kitchen operation. This includes managing a small team of kitchen assistants and second cooks, ensuring that the atmosphere is one of mutual respect and high productivity.
Your Core Responsibilities:
- ✔ Clinical Nutrition: Designing menus that meet CQC (Care Quality Commission) standards, including fortification for residents with low BMIs and texture-modified meals (IDDSI levels).
- ✔ Financial Oversight: Managing the kitchen budget, reducing wastage, and negotiating with local Brighton suppliers for the best seasonal produce.
- ✔ Compliance & Safety: Maintaining a 5-star food hygiene rating, ensuring all HACCP documentation is up to date, and leading by example in kitchen cleanliness.
