Key Responsibilities
Dim Sum Production
Hand-prepare all dim sum items including har gow, siu mai, char siu bao, lo mai gai, egg tarts, and turnip cake from scratch using authentic methods.
Menu Development
Collaborate with the Head Chef on seasonal specials and new dim sum offerings that reflect both tradition and modern presentation standards.
Station Management
Oversee the bamboo steamer station, wok station, and deep-fry section, ensuring consistent timing and output across high-volume yum cha service periods.
Food Safety Compliance
Maintain strict HACCP standards, allergen documentation, temperature logs, and kitchen hygiene protocols in compliance with FSA guidelines.
Team Mentoring
Train and develop commis chefs and kitchen assistants in authentic dim sum techniques, wrapper construction, and classical Chinese flavour profiling.
Stock & Ordering
Manage ingredient par levels, liaise with Asian food suppliers, and minimise waste through disciplined mise en place and portion control.
What We Are Looking For
Essential Requirements
- ✓ Minimum 3 years' experience as a Dim Sum Chef or in a specialist Chinese kitchen
- ✓ Proven ability to hand-make dim sum wrappers and authentic fillings from scratch
- ✓ Strong knowledge of Cantonese cooking techniques, seasoning, and presentation
- ✓ Food Hygiene Level 2 certificate (Level 3 preferred)
- ✓ Eligibility to work in the UK and ability to commute to Liverpool L1
